Meatballs with Tomatoe Sauce

Meatballs with Tomato Sauce

For the Meatballs:
900 grams/2lbs ground beef
2 tablespoons chopped herbs, oregano, rosemary
1 egg
1 garlic, crushed
1/2 cup of bread crumbs
 salt and pepper

1/2 cup olive oil

For Tomato Sauce
2 400grams/14 oz cans of tomato, chopped
1 400grams/14 oz can of tomato pure/sauce
1 garlic clove, crushed
Add 1/2 tsp.oregano, 1/2 tsp. rosemary, 1/2 tsp. thyme, 1/2 tsp. marjoram
salt and pepper

Preparation method
Heat oil 1/2 cup, in a heavy stainless sauce pan or wok

In a bowl, mix the minced meat with egg, breadcrumbs and spices.
Mix all together.

Form meatballs, place in oil and cook on low heat until done.

While meatballs are cooking make the tomato sauce.

Place the cans of tomato sauce in a stainless steel  saucepan.
Add all ingredients.
Cook on low heat.

Add meatballs to the sauce and let cook together for about 20 mins.

Serve meatballs
 Don´t forget to sprinkle the Parmesan cheese on top.

Note: Meatballs can always be frozen for later use:

Lentil Soup

Lentil Soup
Great for Cold Winter Nights

2 cups of Lentils
4-6 cups of water
1/2 Frozen potatoes ( sliced)
1/2 cup of Frozen baby carrots
1/4 Chorizo, cut into small pieces
1 garlic clove crushed
1 tsp. salt
1 tsp. pepper

Bring lentils to boil, reduce heat to low.
Add all the above ingredients and let cook until the lentils are tender. (about an hour)
Add water if needed.

Easy Peasy Recipes: Aritchoke Dip

ARITCHOKE DIP
This is one of my families favorite!!!

1 can chopped artichokes ( 250 grams) drained well
1 cup of mayonnaise
2 cups of Parmesan cheese, grated
1 1/2 tsp. garlic powder
Sprinkle bread crumbs on top

Mix all ingredients together in a large bowl (excpet bread crumbs), spoon into a baking dish.
Bake in oven for 25-30 mins . 375F (190c)

Serve with toasted bread or crackers

Easy Peasy Recipes: Easy Chicken Stroganoff

EASY CHICKEN STROGANOFF

4 oz fresh mushrooms, chopped
1/2c. celery, chopped
1/2c. chopped onions
2 T. butter
4 chicken breasts, cooked and cubed
1 can of cream of chicken soup or chicken broth
8 oz. sour cream
1/2 c. sherry
Salt and pepper
6 oz. egg noodles, drained after cooking

Saute´mushrooms, celery and onion in butter. In a bowl, mix all the above except egg noodles. Place egg noodles in a greased casserole dish. Spoon chicken mixture over noodles. cover and bake at 350 degrees or 180c. for 30 mins.

Easy Peasy Recipes: A Delicious Dish for a large family gatherings or coffees with friends or just

EGG AND SAUSAGE CASSEROLE       
One of my mother favorites to do at Christmas

SET OVEN 350 degrees -108 C

1 1/2 LBS. SAUSAGE
1 1/2 LBS. CHEDDAR CHEESE ( I grate my cheese)
3 CUPS ( 3qts)  OF MILK (DO NOT USE SKIM MILK....)
1 1/2 TSP. DRY MUSTARD
9 EGGS
PEPPER TO TASTE
1 TSP SALT
WHITE BREAD, trimmed and fitted in bottom of 3 qt. casserole.
                           I, then, cut bread in half to fit snugly.

Brown sausage, crumble, drain on paper towel.
Mix eggs, milk, mustard, salt and pepper.
Stir in sausage and cheese.
Pour into 3 qt. baking dish and refrigerate overnight.
(I take out early so it can get room temperature before I bake)
Bake at 350 (180 c) degrees for 1 hour.
                                              
 Serves 12 people......(cut in slices while still in dish)

Easy Peasy Recipes: A Party´s Favorite

Starting with my first Easy Peasy Recipe.
This recipe is in the International Newcomers of Madrid cookbook.
This is a hit at all parties.

Cream Cheese and Caviar Ball

8 ounces of cream cheese, softened
1 onion, chopped
4 ounces of caviar

Mix softened cream cheese and chopped onions together. Blend well. Roll into a ball and put in the fridge for a few hours or overnight to chill. ( The cream cheese absorbs the flavor of the onions). Take out of the fridge and cover the entire cheese ball with the caviar. Refrigerate until ready to serve.

Serve with crackers or toasted bread.

Easy Peasy Recipes

This is my first Blog and what inspired me to start one was my family. When I would cook meals for family or friends, they would always ask me for the recipe and I would say ¨ it was EASY PEASY¨. So it became a habit of mine to say each time.

They also encourage me to start a blog about EASY PEASY RECIPES to share with others.

My daughter who is college has asked me to send her my recipes so she can cook easy meals and share  them with her friends.

These recipes are easy to cook for working families, college students, newly weds or just to have a quick meal or entertaining.

I will share with you some of my recipes and you can send me some of yours.
